Ginger and fennel, foods with nausea reducing properties
Peel the fennel, cut it into thin strips. To blanch it, submerge in a saucepan of lightly salted boiling water for 5 seconds. Then remove it and place in a bowl with water and ice cubes. Let it cool for a few seconds, remove it from the water and dry with some absorbent paper.
Cut the courgette into very thin slices, the apple into wedges, and extract the pomegranate seeds.
To make the dressing, squeeze the juice of an orange, grate some fresh ginger and add olive oil and salt.
Assemble the salad by making a bed of lamb's lettuce. Top with courgette slices, apple wedges, fennel strips and pomegranate seeds. Season with orange juice, oil and salt. It is important to eat it immediately so as not to let the apple oxidize.
